Primary fermentation:

Soft pressing, static decanting of the must, fermentation at a controlled temperature (15°C) with selected yeasts.

Maturing & Aging:

Refinement sur lie and stop in steel for three months.

Second fermentation:

Charmat method in steel autoclaves, with frequent stirring in order to favor the release of noble substances by the yeasts.

Characteristic notes:

Greenish color with golden reflections. The nose reveals a delicate floral bouquet with light citrus notes.

Service temperature:

6/7° C in flûte.

Pairings:

Ideal for aperitifs, brunches or sea food.
